The introduction to the Fine dining restaurant 'The Library @ Browns Hotel' There are times when a special occasion demands extra special surroundings. Somewhere where privacy is guaranteed and where personal service is lifted to exceptional levels, with elegant and understated luxury for the ultimate dining experience, this culinary excellence is pursued by the team at Browns with passion and creativity.
The philosophy of the 'Library @ Browns' Our chefs have been obsessed with food, ingredients and the 'eating out' experience for as long as they can remember, with this in mind our aim is to take you on a journey of taste, texture and temperature using classics with forward thinking techniques to create something unique and modern without forgetting key elements of flavour and seasonality, the core and heart which drives us to push that extra mile. The tasting menu will deliver a real adventure of the palate, nurturing course by course to tantalise all the senses. We are excited by the un-expected, it could be an adaption of a timeless dish or serving ingredients in different guises that will make the meal memorable. Ultimately, going to the Library is about fun - going on an adventure of smells, sights, tastes and textures. Mike Palmer is from the West Country, born and bread in Princetown, Mike began his culinary career in Devon, aged 15 working in a local public house The next five years he undertook a full five year apprenticeship for Welcome Hotels, during this period he moved to the Two Bridges Hotel – Princetown – Devon. Mike was then given the opportunity to became Head Chef of Browns Hotel – Tavistock, sister property to the highly acclaimed 22 Mill Street - Chagford were he achieved within the first six months – 2 AA Rossettes. Mikes dream is to put Tavistock onto the culinary map, through hard work and consistency. Mikes brigade play the most important role in the day to day running and he is supported by a young energetic team of chefs. They all bring their own personalities, passion and love to the job they undertake, and with Mikes support continue to flourish and grow as part of the ever improving and developing team. Through their support, commitment and dedication, Mike truly believes that anything is achievable. The Library is Mike’s idea - away of redefining, renewing & developing the dining experience and utilise his culinary expertise, creating a sequence of dishes designed not only to capture a delicious and exciting range of flavours, textures and aromas, but also to bring multisensory appeal, some culinary history and a sense of theatre to the dining experience.
