Browns Hotel & Restaurant has always been committed to sourcing the finest and freshest premium quality produce available. It has been one of the key ingredients to the popularity and success of our hotel restaurant in Tavistock and the varied and exciting menus that our executive chef creates. Our locally caught fresh fish comes from Kingfishers in Brixham. The company began when Gordon Summersby started buying and selling off Brixham fish market in the late 60's, having previously owned and worked a crabber off Lundy Island.
His son Nick joined him in 1981 and between them they started Kingfisher. Fast-forward to the present and you find a thriving company with a seventy-strong team that's synonymous with seafood and a huge part of the fishing "family" within the local community. Brixham is regarded as the UK's largest prime fish market (Turbot, Bass, Red Mullet, John Dory, Brill, Dover Sole and Lemon Sole), which means that we have guaranteed access to some of the best daily catch in the country. Browns hotel has the privilege of receiving the best meat supplies from our local traditional family butchers enterprise - "J & S Downing's butchers". Whilst all our suppliers are locally sourced, J & S Downing's Butcher shop is near enough on our doorstop – certainly reassuring that the ease of accessibility dismisses any problems with fresh deliveries! John and Sam Downing formed their business 21 years ago and is still going strong with their two shops open to present their trade – one in The Pannier market, Tavistock and also one in Bere Alston. The two brothers proudly know what quality is when it comes to the various selections of meats they offer. Whole beef & lamb cattle come from nearby Grendon Farm, Mount Tavy, and are processed in the nearby Haverley. From supplying traditional local meats selected themselves, such as beef, lamb, and pork, to the making of 12 varieties of herbed sausages and homemade steak and kidney pies. Country Cheeses is based in the heart of Tavistock's well known "Pannier market" on the doorstep of Browns Hotel. This family run business originally specialised in selling only six cheeses on their market stall to customers. The success of their products soon escalated and now "Country cheeses" have three shops – in Tavistock, Topsham and Totness where around a hundred cheeses are now sold, all British and the majority of those from the Westcountry. Their aim for their service has always been; for people to have a good, memorable, and tasty experience when they visit their shops – the staff, ironically known as "cheese operators" are clearly making this happen now the business has been running a successful 20 years! We are proud to supply our customers at Browns Wine Bar with a range of speciality locally produced drinks from St Austell Brewery. Founded in 1851, St Austell is one of the oldest businesses in Cornwall and still family owned yet impressively still one of Cornwall's largest private companies. The main operation of this business takes place in St Austell at its Victorian brewery but has four distribution centres in St Columb, Ilfracombe, Collumpton and Heathfield. Walter Hicks founded St Austell Brewery almost 160 years ago, the company remains in private hands with numerous of Walter Hicks' descendents who are now involved as shareholders, employees and directors.
